Culinary Road Trip: Pacific Northwest

By: Cecily Gamba

The next stop on our culinary road trip at Suite D is the Pacific Northwest! As many of you know, our Culinary Road Trip Series is a dinner series in which we work our way through some of the many fabulous food destinations in the country. Before we head over to Suite D on June 23rd to enjoy this next stop in our series, let’s learn a little more about the Pacific Northwest and it’s traditional cuisine.

Pacific Northwest cuisine comes from the states of Oregon, Washington, and Alaska, as well as British Columbia. Along with the rocky coastal beaches, majestic mountains and lush agricultural land, the cuisine reflects the ethnic makeup of the region, with influence from Native American and Asian traditions.

Salmon, shellfish, as well as other fresh seafood are commonly used in Pacific Northwest dishes. There are several varieties of local, healthy, fresh salmon available in the area, and it is a generally easy dish to prepare. Fish are often smoked or grilled, and most dishes are prepared simply, emphasizing the freshness of the ingredients used. Washington and Oregon are major fruit producers, so apples, pears, stone fruits, cherries, and berries play a large role in everything from pies, to jellies, to savory dishes. Game meats such as moose, elk, and caribou are common as well, along with potatoes, kale, mushrooms and hazelnuts (the official state nut!). Of course, doughnuts of all flavors prevail across the region.

Now that we’re craving all of this food, it’s time to prepare your palate for some PNW dishes at Suite D on June 23rd! Starting at 5:30, the first course will be a Shaved Asparagus and Hazelnut Salad. This will be followed by Butter Rubbed Salmon with Blueberry Sauce, accompanied by Summer Succotash and Pine Pesto. To end the meal on a sweet note, Maple Glazed doughnuts will be served. $5 wine corkage, $38 per person. As always, there will complimentary corkage and a 15% ticket discount for Suite D and RATW Wine Club members. We hope to see you there!
