Recipe: Chocolate Pots du Crème

Saturday is National Chocolate Day! And, if we had to make a list of our top 5 favorite unusual holidays, National Chocolate Day would definitely be one of them. After all, there really is nothing more satisfying than chocolate.

In honor of this marvelous holiday, we would like to provide you with the recipe for our Chocolate Pots du Crème. This decadent recipe is easy to make and can even be made a few days in advance. However, if you lack self control like we do, we suggest making double so you'll have enough for your guests too.

 

Chocolate Pots du Crème

serves 6

Ingredients

1 cup whole milk

3/4 cup heavy cream

7 ounces bittersweet chocolate, roughly chopped

1 teaspoon pure vanilla extract

6 large egg yolks

1/3 cup sugar

Directions

Preheat the oven to 350°F.

Place the milk and cream in a saucepan and bring to a boil. Remove from the heat. Add the chocolate and vanilla, cover, and allow the chocolate to melt. In a large bowl, whisk the egg yolks and sugar. Remove any foam. Stir the chocolate mixture until smooth and slowly whisk it into the egg mixture. Strain the mixture and chill it in the refrigerator until cool, about 1 hour.

Place six 4-ounce ramekins in a baking pan. Fill the ramekins with the chocolate mixture and pour boiling water into the baking pan, about two thirds up the side. Cover the pan with foil and bake for about 1 hour or until just set. Eat the Pots du Crème straight from the oven, or refrigerate for at least 2 hours and then serve.

These can be enjoyed either warm or cold. Serve with a dollop of crème fraîche or whipped cream.
