vendredi vocab: frisée


Vendredi means “Friday” in French. Each week we add something new to our culinary vocabulary by delving into a word from our menu.

This week the word is: frisée

"A member of the CHICORY family, frisée has delicately slender, curly leaves that range in color from yellow-green. This feathery vegetable has a mildly bitter flavor and is often used in the special salad mix, MESCLUN. Choose frisée with crisp leaves and no sign of wilting. Refrigerate in a plastic bag for up to 5 days. Wash before using." (Food Lover's Companion)

Frisée is a great addition to any salad. While it does have a slightly bitter taste, it provides the perfect balance when paired with sweet or rich flavors.

This winter at the girl & the fig, we featured frisée in our delicious smoked trout salad with watercress, frisee, cucumber, lemon, horseradish & potato chips.

The delicate, smokey fish accompanied with bright citrus flavors, crunchy, bitter veggies and a creamy dressing is a winning combination!
